1/3 cup firmly packed brown sugar
1/3 cup golden syrup
11/3 cups unbleached plain flour, sifted
3/4 teaspoon bicarb. soda
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground clove

Preheat oven 180 degrees C,

Grease paper line trays,

Combine butter, sugar, syrup in a saucepan over low heat on stove top, stirring until smooth. Remove from heat.

Stir in sifted dry ingredients. Allow to cool a further 10 mins.

With a heaped teaspoon roll mixture into balls or small ice cream scoop, place balls 5cm apart on tray, then flatten into cookie shape.

Bake for 10mins or until light brown.

Cool on trays on cooling rack.
