Nuts add such a wonderful flavor, and with this recipe for Hazelnut Cookies there is no exception. This recipe will soon become a favorite.
Preheat oven to 180 degrees C, Lightly grease and paper line bake trays.
Sift together flour, sugar & cinnamon into mixer bowl, then rub in butter into a crumbly breadcrumb like mixture,
Add hazelnuts, yolk, lemon rind and combine well, using hands turn onto a lightly floured workbench surface or floured board, knead until smooth consistency.
Lightly flour rolling pin and roll out until approx. 3mm thickness, using 6mm round cookie cutter. Place on bake tray.
Bake for 10 mins. or until lightly golden. Place on wire racks to cool.
Prepare another tray lined with non stick paper & wire rack over the top.
While cookies are cooling, melt dark chocolate in a bowl over a saucepan of simmering water. Stir chocolate until melted, then remove from heat, half dip cookie rounds into the chocolate. Place cookies on wire rack to drip and set. Place cookies into the refrigerator to fully set.
Serve.
