Almond Cookies

Add extra chopped almonds as well as ground, for extra nutty taste.
Many variations are made from the basis of this cookie. By adding chocolate as well as nuts, or chopped candied fruits for a different twist to this classic are also delicious. Which one will be your favourite…I love them all.

 375g plain flour
 2 teaspoons of baking powder
 1 teaspoon salt
 125g unsalted butter, finely chopped
 250g caster sugar
 180g ground almonds
 100g freshly ground coffee
 1/4 teaspoon ground cinnamon
 3 lightly beaten eggs, [free range or organic preferred]
 Preheat oven to 180 degrees C, [350 degrees F]
 Beat flour, baking powder, salt, then add butter & combine until powdery.

Mix in sugar, ground almonds, coffee & cinnamon.

Add eggs & mix briefly until a dough forms.

Turn dough out of mixing bowl to finish by hand.

Shape dough into a rectangle then cut into 3cm bars & place on lined trays.

Bake for 25 mins, remove and cool on wire rack.
