1 egg [free range or organic preferred]
1 cup plain flour
1 cup self raising flour
1 cup desiccated coconut
1/2 cup chopped natural almonds

Preheat oven @ 190 degrees C, [375 degrees F].

Lightly whisk egg in measuring cup with 1/2 cup vegetable oil + vanilla extract.

Combine remaining ingredients in a bowl, grate the skin of 1 lemon.

Roll 2 tablespoons of mixture at a time into balls,

flatten balls into cookie shape onto grease proofed paper lined trays.

Bake in preheated oven – 15 mins.
