This Diabetic recipe for Cinnamon cookies is delicious. Cinnamon is a comforting flavoured spice and this recipe is an easy level bake without the sugar guilt, so even when your not a Diabetic but your watching your sugar intake you can enjoy as a special treat.

Cinnamon Cookies

 2 eggs
 2 tbsp water
 5 tsp granulated sugar replacement (found in your local health food store)
 1 tsp cinnamon
 1 1/2 cup plain flour
 1/2 tsp baking soda
 1/4 tsp salt

Preheat oven 375 degrees F, grease & line bake trays.

In mixer bowl beat eggs and water until light and fluffy,then add & beat in sugar replacement and

cinnamon.

Combine flour with baking soda, sift together with salt.

Sift half the dry ingredients over egg mixture, fold completely into egg mix then repeat with

remaining flour until combined.

Using a teaspoon, drop cookie dough onto greased cookie sheets 2 to 3 inches apart.

Bake 10 to 12 minutes or until golden brown.

Place trays to cool on wire racks.
