
125g unsalted softened butter
11/4 cups firmly packed brown sugar
3 teaspoons ground coffee
1/2 teaspoon vanilla extract
1 egg
3/4 cup sifted unbleached self raising flour
3/4 cup sifted unbleached plain flour
70 – 100g bag of whole coffee beans

Preheat oven to 180 degrees C,

Grease, paper line trays,

Beat butter, sugar, ground coffee and extract in mixer bowl until pale and fluffy,

then add egg until combined, then stir in flours.

Small ice cream scoop or rounded teaspoon mixture into balls 3cm apart on baking tray.

Top each cookie round with fresh whole coffee bean.

Bake 10mins or until browned.

Cool on trays for 5 – 10mins, then transfer with spatula to wire cooling racks for further cooling.
