 185g [6oz] unsalted butter
 1 cup caster sugar
 1 1/2 teaspoons vanilla extract
 2 1/2 cups plain flour
 1 egg [ preferably free range or organic] Raspberry or strawberry jam
 optional# drops of red food colour for extra caster or white sugar or confectioners sugar for dusting

Preheat oven to 180 degrees C, [350 degrees F] Beat unsalted butter, sugar & vanilla until smooth

Add flour & eggs into a smooth dough, knead dough lightly, then plastic wrap and 30 mins in refrigerator.

Place dough between grease proof paper & roll out to 5mm [1/4 inch] thickness

Using love heart cutters, 1 large, 1 small/medium size, depending on desired effect,

For each biscuit,…1 large whole biscuit no hole,

+ 1 large with centre cut out with small – medium cutter & sprinkle with pink sugar, or leave out confectioners sugar until after baked cookies are cooled,

Place on paper lined tray, bake for 12 mins or lightly golden

Cool on rack, then spread base biscuit with strawberry or raspberry jam [no fruit chunks],

Place cut out biscuit with sugar on top of jam spread heart, sandwich effect. Serve.
