
125g pecan nuts
60g unsalted butter
1/4 cup icing sugar
1 teaspoon vanilla
1/2 cup plain flour

Preheat oven to 180 degrees C, lightly grease and paper line trays.

Take 1/4 of pecan nuts and chop finely or grind, reserve the remaining nuts -leaving them whole.

Cream butter with icing sugar & vanilla until light and fluffy.

Add half the flour and chopped nuts, stir through, then add remaining flour.

Flour hands and roll a level teaspoon of mixture into balls, then place balls on lined paper tray 2.5cm apart.

Take 1 whole walnut and place on top of ball, press into ball.

Bake for 10 mins. or until lightly golden. Cool on trays on wire racks.

Dust with icing sugar before serving.
