    Walnut Cookies

    This recipe for Walnut Cookies is an Italian favorite. Using whole blanched almonds as your base gives a delicious nutty texture and taste sensation.

    Walnut Cookies
    Yields1 Serving

     185g blanched almonds, or ground almond meal
     60g walnut pieces
     1 egg white, plus 1 extra egg white
     1/2 cup sugar
     2 tablespoons rum
    1

    Preheat oven to 180 degrees C, lightly grease tray.

    2

    Place walnuts on another clean baking tray and place in the oven for 5 mins to roast, remove, cool then chop finely.

    3

    Place whole almonds in the food processor using metal blade to grind, or buy ready made blanched ground almond meal.

    Place in mixer bowl, then add egg white, sugar and rum, beat until well blended.

    Place non stick paper onto work bench, place dough onto paper and add another sheet of paper over the top to sandwich,

    Roll dough out between the two sheets with rolling pin to approx. 5mm thickness, peel off top layer of paper and commence cutting cookie shapes out with 4cm round of scalloped round cutter.

    Take away excess dough leaving cookies on the paper,

    Brush cookies with extra egg white and top with the finely chopped walnut.

    Transfer from workbench to bake tray. Bake for 5 – 10 mins. or until golden.

    Re roll remaining dough and cut into cookies, repeat the process, so as not to waste a bit of the dough.

    Makes approx. 24.

    Blanched whole almonds and Walnuts are great for you and easy to find and purchase, being a whole food there are no surprises and packed with nutrients and easily found also as ready ground almond meal. Generally your health food stores and grocery stores have tried & trusted brand names for your convenience.
