This savory Cheddar Cookies recipe is quick to pre-prepare the dough in advance, but does need a minimum 3 hours resting time in the fridge prior to the baking process. This makes this a perfect entertainers dough as it can be prepared the night before needed.
Sift flours into mixing bowl, then rub butter into flour mix.
Then add cheese and lemon juice, knead till a soft ball of dough forms, using hands still, roll dough into a 35 – 40cm snake.
Wrap in non stick baking paper, then foil.
This will stay in the refrigerator for a minimum of 3 hours, or over night.
When ready to bake your Cheddar Cookies, simply pre-heat oven to 18o degrees C, and lightly grease oven trays.
Remove wrapping from dough and cut roll into 5mm slice thickness, place on trays.
Bake for 15 mins, or until lightly golden brown.
Cool cookies on trays placed on cooling racks.
